THE STORY OF CHAD’S -
Chad made his first batch of hot sauce in December of 2019, while off rotation from his job as a Superyacht Captain. Back home on the beautiful Mount Desert Island (also home to Acadia National Park), he was thumbing through a Patagonia catalog. While a lover of flannels (iykyk), it was a hot sauce recipe that caught his attention. It was good, but it could be better…and Chad’s Single Reef was born.
On February 29, 2020, he boarded a plane from Maine to take him to his command in Bora Bora. Weeks later, the world changed with the Coronavirus. He was “stuck” (cue tiny violins) in French Polynesia and under curfew. So as you (i.e. Chad) would, he started stand-up paddleboarding before dawn when the Gendarme arrived, then ventured out into the Tahitian jungle collecting small hot peppers --- the sauce which became the prototype for Chad’s Double Reef.
Next stop New Zealand! With special permission from the Prime Minister herself, Chad’s vessel was the first allowed into the country (serious haz-mat suits and crazy quarantine for ship and crew alike). Cleared for admission but now infected with a serious sauce bug, Chad picks a pepper wherever he travels. Back in Maine, Chad’s uses New England grown Fresno, Habanero and Habanada peppers to make his globally inspired small batch sauces – Single Reef, Double Reef, Triple Reef (in production) and Code Zero.
The heat scale is a nod to his sailing background and to “reef” means to reduce sail to handle increasing winds. Single Reef is made with the milder Fresno pepper. Double Reef is made with the same ingredients as the Single Reef but with the Habanero pepper --- a medium heat pepper. Triple Reef, now in production, same ingredients as both the Single and the Double but made with the hotter Ghost Pepper. Lastly, Code Zero (a sail used for light air) is our barely-heat hot sauce made with the mild Habanada pepper, minus the chili oil.
Crafted for flavor seekers who want more than just heat in their hot sauce, Chad’s is made with fresh ingredients that elevate the essence of the pepper and enhance whatever you decide to put it on.
